Ingredients

  • 1 cup Bayara fine bulgur, soaked
  • 4 cloves garlic, minced
  • 1 Tsp Bayara black pepper
  • 1 Tsp Bayara dried mint
  • 2 Tsp Bayara salt
  • ½medium sweet red pepper, mashed
  • 1kg minced meat
  • 2 Tbls olive oil
  • 3 medium potatoes
  • 1 large onion, thinly sliced
  • 2 medium tomatoes, thinly sliced
  • 2chopped green peppers
  • 1 medium sweet red pepper, thinly sliced
  • 1 Tsp Bayara salt
  • ¼ Tsp Bayara black pepper
  • ½ cup olive oil
  • 1 cup water
  • Chopped fresh parsley, for garnish
Method

Method

  1. In the mixer, place the garlic, sweet pepper, salt, black pepper, mint, and olive oil and mix until smooth.
  2. In a large bowl, place the mixture and add the bulgur, minced meat, and a few drops of olive oil.
  3. Mix the ingredients by hand until a soft doughis formed.
  4. Use wooden chopsticks to form the kofta with a hole in the middle.
  5. In a large 15-inch round tray, place the potatoes, sliced red and green peppers, tomatoes, and onions, season with salt and black pepper, and mix.
  6. Arrange the kofta (without the wooden chopsticks) in the tray and add a cup of water and some olive oil.
  7. Cover with aluminum foil and roast in the oven for half an hour.
  8. Before it comes out of the oven, remove the aluminum foil,and let the top roast for a few minutes until well browned.
  9. Serve with rice or pasta.
